Chimichurri sauce recipe

It’s summer time, it’s a year divisible by four and that means only one thing. Well, two.

Barbecue season! World Cup time!

We’re combining both to bring you a recipe for the tasty Chimichurri sauce, popular throughout South America, our favourite BBQ foods and our World Cup predictions below.

 

Chimichurri

Chimichurri is like a pesto, super easy to make and an essential condiment to get you in the mood for the summer – and travel and to remind you of South America.

Make it the day before for a really great tasting Chimichurri.

Chimichurri recipe

 

Ingredients

  • Big handful of fresh parsley leaves – remove any thick stems
  • 3-4 garlic cloves, depending on how much you love your garlic, peeled and chopped or mashed up.
  • Two tablespoons of fresh oregano (or one of dried oregano)
  • Half a cup (150ml) of good quality olive oil
  • 2 tablespoons (25ml) red wine vinegar (white is OK too)
  • 1 teaspoon salt (sea salt is best)
  • Quarter teaspoon freshly ground black pepper
  • Quarter to half a teaspoon of red pepper flakes

 

Preparation

You can use a food processor, or chop all these ingredients if you wish. If you use a food processor, be sure to regularly stop the machine and scrape down the sides of the bowl, to make sure everything mixes in.

Finely chop the parsley, oregano, and garlic and put into in a small bowl (or chop in a food processor).

Then, stir in the olive oil, vinegar, salt, pepper, and red pepper flakes gradually (same with food processor). Adjust seasoning to suit your tastes.

Serve immediately or refrigerate for the next day.

If you do chill the Chimichurri, be sure to allow it to come back to room temperature before serving, and to stir well.

The sauce can be kept for up to a week in the fridge.
